Paneer Kulcha Recipe

Paneer Kulcha is made from maida flour, water, a pinch of salt and a leavening agent yeast or old kulcha dough, mixed together by hand to make a very tight dough. This dough is covered with a wet cloth and left to stand for an hour or so in a warm place.

The result is a slight leavening of the flour but not much. The flour is pummeled again by hand and then rolled out using a rolling pin into a flat, round shape. It is baked in an earthen clay oven tandoor until done.

When baked, it is often brushed with butter or ghee, although this is not necessary. It is then eaten with any Indian curry. In particular, a spicy chickpea curry known as chole is the dish of choice for being eaten with Paneer Kulcha.

Ingredients Quantity to Prepare Paneer Kulcha Recipe

Kulcha Dough

  • 1 cup Refined Flour.
  • 1 cup Wholewheat Flour.
  • 1/2 teaspoon Baking Powder.
  • 1/4 spoon Soda Bicarbonate.
  • 1/2 teaspoon Salt.
  • 1 teaspoon Sugar.
  • 1/2 cup skimmed Milk.
  • 1 tablespoon skimmed Milk Yogurt.
  • 1 tablespoon Rice Bran Oil.


  • 200 grams skimmed milk Cottage Cheese.
  • 2 Green Chilies chopped.
  • 2 tablespoons chopped fresh Coriander.
  • Salt to Taste.

Steps To Prepare Paneer Kulcha Recipe

1Sift together the refined flour and wholewheat flour with baking powder, soda bicarbonate and salt into a bowl. Add the sugar,milk, yogurt and one-fourth cup of water. Knead well into a medium-soft dough.

2Apply the oil on the dough, cover with a damp cloth and set aside for one hour.

3Divide the dough into four equal portions and shape into balls.

4Place the cottage cheese in a bowl. Add the green chilies, fresh coriander and salt and mix well. Divide into four equal portions.

5Preheat an oven to 180℃/350″ /Gas Mark 4

6Place the dough balls on a lightly-floured worktop. Flatten them slightly. Place a portion of the cottage cheese filling in the center of each, gather the edges and seal. Cover with a damp cloth and rest for five minutes.

7Flatten each ball between your palms and make a nine-inch-round disc.

8Place the kulchas on a baking tray and bake in the preheated oven for about fifteen minutes. You can also cook the kulchas on a tow till both the sides are evenly cooked.

9Alternatively you can place the kulcha on a cushioned pad and stick onto the inside walls of a moderately hot tandoor and bake for three to four minutes.

Now Paneer Kulcha is Ready to Serve hot.
